Lion’s mane mushrooms (Hericium erinaceus) are made up of numerous long, white, fleshy spines that grow in a shaggy, pom-pom-like shape on dead hardwood trees like oak.
They can be eaten raw, dried or cooked and taken in capsule form. They are rich in thiamine, riboflavin, niacin, and minerals like manganese, zinc, and potassium.
They have been used in Chinese and East Asian medicine for 2000 years.
